Ingredients
Pear & Pecan Pull-Apart Bread with Cream Cheese Glaze
- 300 water
- 3 level tsp dried instant yeast
- 1 level tbsp olive oil
- 500 grams flour
- 1 level tbsp brown sugar
- 1 level tsp salt
- 3 level tbsp Butter, melted
- 100 grams brown sugar
- 1 level tbsp cinnamon
- 2 pears, thinly sliced
- 70 grams pecans, roughly chopped
- 120 grams cream cheese
- 80 grams icing sugar
- 0.5 level tsp Vanilla Paste
- 2 level tsp Milk

- Place the water and yeast into Thermomix bowl and warm for 2mins/ 37°C/speed 1.
- Add the olive oil, flour, brown sugar and salt. Mix for 6 secs/speed 6. Enable dough mode and knead for 3 minutes
- Remove dough from Thermomix and place in a lightly oiled bowl. Cover and leave in a warm place to rise until doubled in size.
- Once risen, turn the dough out onto a floured surface and roll into a 24cm/9” square. Brush all over with melted butter and sprinkle with brown sugar and cinnamon. Cover with the pear slices and pecans. Cut the dough into 8cm/3” squares with a sharp knife.
- Stack the squares upright in a greased 900g/2lb loaf tin – it helps to stand the tin on one end while filling. Leave in a warm place until risen and puffy.
- Meanwhile, preheat the oven to 180°C/350°F and make the cream cheese glaze.
- To make the cream cheese glaze, place all the ingredients together in a bowl and beat until smooth.
- Once bread has finished rising, place in the oven and bake for 25 minutes. Remove from oven and place on wire rack to cool a little before drizzling with the glaze.
