Ingredients
Sweetened Ice Cream Mix
- 500 g double cream, whipping cream can be used
- 250 g full cream milk
- 75 g raw sugar
- 2 egg yolks
- 1 pinch salt
Chai Mix
- 3 tablespoon chai latte powder, Henry Langdon Vanilla Chai is good

Mix cream, milk and sugar sp2, 5-7min, Varoma. This is to bring the mixture to the boil. If it reaches boiling point before the time is up then just stop it.
Allow mixture to cool to 60C by mixing on sp3 for 10min. This helps to release some of the heat in the bowl. Don't add the yolks at a hotter temp and they may curdle the mixture.
Just before the end of time add in the Chai Latte powder to mix through. **
While the mixture is mixing and cooling, with a fork whisk the salt into the egg yolks.
When the mixture has reached 60C add in the yolks and heat to 90C, sp2, approx 2-3min. Once 90C is reached, reset the timer to 4min, 90C, sp2.
Cool down the mixture by placing the mixture in another bowl and pop it into a sink with cold water and ice (I use the freezer blocks). Whisk the mixture a few times while cooling to help release some of the heat.
Alternatively you can place the mixture into a zip lock bag and place it in a bowl of ice.
The quicker the temp is dropped the less likely the ice cream will form ice crystals through it.
Don't place the hot mixture straight into the fridge or freezer to cool down. Not very good for the foods stored in there.
Once cooled you can store the mixture in the fridge until needed or pour into your pre cooled ice cream machine and churn. If using an ice cream machine there is no need to re mix in Thermie before serving. It scoops perfectly!
Can also be placed in the freezer to set and then you can give it another whizz in the Thermie to help soften before serving.
Tip
** At this point in the recipe you can add in chocolate and cocoa powder, chilli powder, white chocolate, etc.
After the ice bath stage/churning stage you can add in any mixins you would like - cookie dough, choc chips, fruit, couli, favourite lollies or chocolate bars, mini m&ms, use your imagination!!
I've tried a lot of ice cream recipes and although this one has a few extra steps it is the creamiest, most scoopable ice cream I have ever made.
