Chocolate Cocoa Lava Cake (without actual chocolate)
- 100 g Butter, or dairy free alternative e.g. Nutellex, Olivani
- 150 g sugar, white
- 3 eggs
- 50 g Flour, Plain
- 25 g cocoa powder
- 1 tsp vanilla essence
- extra butter (or non-stick spray) & cocoa powder, for greasing ramekins

- Preheat oven to 180°C
- Grease the insides of 5 ramekins with butter (or non-stick spray) and dust them with cocoa powder to prevent sticking. Shake off any excess cocoa powder.
- Cut butter into cubes. In the Thermomix bowl, melt the butter (or dairy free equivalent) - 3 minutes at 60°C on Speed 2.
- Add the sugar to the melted butter and mix for 20 seconds on Speed 4 until the mixture is well combined and slightly creamy.
- With the thermomix running on Speed 4, add the eggs one by one, mixing well after each addition.
- Add the flour, cocoa powder and vanilla. Mix 20 seconds, Speed 4. Scrape bowl and repeat for another 10 seconds or until mixture is smooth and well combined.
- Pour batter evenly into the prepared ramekins, filling them about 2/3 full.
- Place the ramekins on a baking tray and bake in the preheated oven for about 12-15 minutes. The exact baking time can vary depending on your oven and the size of the ramekins. The desserts should have a slightly set outer layer but a gooey center.
- Carefully remove the ramekins from the oven and let them cool for a minute or two. Then, use a knife to loosen the edges of the desserts from the ramekins. Place a plate over each ramekin and quickly invert it to release the dessert onto the plate.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
