Ingredients
Pudding
- 60 grams Small Pearl Tapioca
- 180 grams filtered water
- 600 grams Milk
- 60 grams Rapadura or Raw Sugar
- 1/4 teaspoon himalayan sea salt
- 1 teaspoon Vanilla Bean Paste
- 2 eggs
Topping
- 3 tablespoon coconut cream
- 20 grams rapadura sugar, extra, for sprinkling

Place the pearl tapioca into the bowl, add the water and leave to soak for 30 mins. Do not drain the water after soaking
Add the milk, sugar, salt, vanilla bean paste and lightly beaten eggs into the bowl and mix on /sp 2/20sec
Insert the butterfly and cook for 12mins/90deg/ speed 2
Pour into serving dishes, swirl the cococunt cream and sprinkle with the extra sugar.
Serve warm or chilled with sliced mango and passionfruit.
To make the pudding
Tip
Chocolate Tapioca:
add 2 tablespoons of Raw Cacao with extra 2 tablespoons of sugar when adding the milk
Dairy Free:
Replace the milk with unsweentened coconut milk or almond milk

Delicious breakfast meal
I used coconut milk, omitted the vanilla and sugar and topped it off with cinnamon and honey.
I'm yet to try this, but you might like to adjust the spelling of coconut in step 4 😅

Easy to make, tastes a little like custard.
Delicious! will definitely make again, I substituted vanilla essence for the paste.
Thanks for sharing! One could also beat egg whites as a merangue, place it on top of the pudding in an ovenproof dish once cooked and bake this in the oven to brown the merangue.
