Ingredients
Pudding
- 215 g Dried Dates, pitted
- 210 g water
- 1 tsp bicarbonate soda
- 190 g brown sugar, lightly packed
- 75 g Nutalex, softened
- 2 eggs
- 1 tsp vanilla extract
- 230 g Gluten free plain flour, or equivalent to 1 and half cups
Caramel sauce
- 220 g brown sugar, firmly packed
- 60 g Nutalex, cubed
- 300 g coconut cream

Preheat oven to 180˚ C (160˚ for fan forced). Line base and sides of a 20cm square loaf/ slice tin. Set aside.
Place dates into mixing bowl and chop 8 sec/speed 7. Scrape down sides of bowl.
Add water and heat 5 min/90˚/speed 2, then mix 12 sec /speed 4.
Add bicarbonate soda and combine 6 sec / speed 2. Pour mixture into another bowl . Clean the bowl and blade thoroughly and completely dry.
Add nutalex and brown sugar into bowl and mix 11 sec / speed 4. Scrape down side of bowl , then mix for 1 min/ speed 4. Scrape down sides once more.
With MC off add one egg at a time to the mixture while the blades are still rotating.
Add vanilla, gluten free flour and reserved date mixture and combine 6 sec/ speed 4.
Pour mixture into prepared tin and bake for 35-40 minutes or until golden brown .Check with skewer if cooked through . Allow to sit for 5 minutes before turning onto a wire rack to cool.
Place all the ingredients into mixing bowl and cook 4 min/80˚/speed 4.
Cut the pudding , pour over sauce and serve.
* Garnish with a scoop of dairy free ice cream

Hi Penny I know you asked this question years ago and probably know the answer by now but if not you can make a chia egg by using
1 Tablespoon chia seeds
3 Tablespoons water
In a small bowl whisk together chia seeds with water. Let mixture sit for 5-10 minutes until it gels up and use as directed in the recipe you're making.

For 2 eggs just double the recipe - we made sticky date pudding last night with chia eggs and I would say it was the best sticky date pudding I have ever had. We used the recipe in the TM31 recipe book which is the same as the one on Cookidoo from the TM5 Basic Cookbook.
what can i substitute the egg for? i can't have eggs or use egg replacer
