Ingredients

Orange and Almond Cake

  • 2 oranges
  • 4 eggs
  • 315 grams raw sugar
  • 300 grams almonds
  • 1 tsp baking powder
  • 1 tsp ground cinnamon

Orange Syrup

  • 1 orange, Zest and Juice
  • 100 grams caster sugar
  • 60 grams water

Recipe's preparation

    Cake
  1. Preheat oven to 160°C. Grease a 20cm round springform pan and line the base with baking paper.

  2. Place 1 litre of water into TM bowl. Insert the steaming basket and put the 2 whole oranges into the basket. Cook for 45 minutes on Varoma temperature on speed 3. When the oranges are ready, set aside until cool enough to handle.

  3. Place almonds in bowl and mill for 10 seconds on speed 7. Set aside.

  4. Place sugar in TM bowl and mill for 3 – 4 seconds on speed 9. Set Aside.

  5. Cut cooled oranges into quarters. Remove pips and end pieces. Place into TM bowl Speed 8 for 10 seconds or until a smooth consistency. Set Aside.

  6. Place eggs and sugar in TM bowl. Speed 4 for 1 minute or until thick and pale.

  7. Add orange, almond meal, baking powder and cinnamon. Mix on Speed 4 for 20 seconds or until just combined. Spoon into prepared tin and bake for 1 hour or until a skewer inserted into centre comes out clean. Set aside in pan to cool completely.

  8. Orange Syrup
  9. Use a grater to remove rind from orange and keep zest. Juice Orange and place juice in TM Bowl.

  10. Add Sugar and Water. 100 degrees, Speed 2 for 8 minutes or until thickened slightly. Set aside to cool. Add zest.

  11. Drizzle cake with syrup and cut into slices OR put syrup in serving jug next to cake for each person to pour on each piece.

    Crazy amount of sugar!  I used 120g of a combination of rapadura sugar, organic honey and maple syrup.  To reduce the amount TM bowl washing required in this method, buy almond meal instead of using whole almonds, cook the oranges and make the sauce in a saucepan rather than the TM bowl.

    A simpler method, therefore, is:

    1. Preheat oven to 160°C. Grease a 20cm round springform pan and line the base with baking paper.

    2. Put the 2 whole oranges into the a saucepan and cover with water. Cook for 45 minutes.  When the oranges are ready, place into bowl of cold water until cool enough to handle.

    3. While organges are ccoking, place 120g of sugar/honey/maple combination, cinamon, teaspoon of vanilla and eggs in TM bowl and mill for 10 seconds on speed 8 or until thoroughly mixed.  To save even more time, consider preparing the topping at this stage  in a small saucepan using only 50g of sugar/honey/maple combination. 

    4. Cut cooled oranges into eighths. Remove pips and end pieces. Place into TM bowl with egg mixture and mill for 30 seconds on speed 8.  Inpect regularly to make sure there are no lumpy bits of orange left.  Process for longer if necessary.

    5. Place almond meal and baking powder in TM bowl and mill for 10 seconds on speed 7.  Scrape down sides pf TM boel anf repeat the process until mixture is smooth. 

    6. Spoon completed cake mixture into prepared tin and bake for one hour or until a skewer inserted into centre comes out clean. Set aside in pan to cool completely.

    Beautiful and moist. I substituted sugar for honey ( reduced the amount) and added 30g extra of nuts. Great recipe, thanks

    I made this for afternoon tea a couple of days ago.
    I didn't pre-cook the oranges - just blitzed them up fresh.

    Baked it as individual friand sized portions.

    Really yummy and very moist!
