Ingredients

Janine's Berry Bounty Bites - Thermie and Friends

  • 200 g dessicated coconut
  • 150 g Fresh berries
  • 40 g Coconut Oil (melted)
  • 1 pinch salt
  • 40 g Maple syrup, (or to taste)
  • 225 g dark chocolate or dark choc melts

Recipe's preparation

    Janine's Berry Bounty Bites
  1. Place berries (see tips) in TM Bowl and puree speed 6 for 10 seconds. Take out of jug and strain in strainer to remove seeds.
  2. Put strained berries in TM Bowl with coconut, melted coconut oil, maple syrup and salt and mix speed 9 for 1 min (or until smooth and holding its shape when pressed together)
  3. Press mixture firmly into a tray lined with baking paper or cling wrap (the tray i used was approx 10x15 cm in size)
  4. Place tray in freezer for 30 mins or so until set. When set cut into bite size pieces and dip into melted chocolate.
  5. Place dipped pieces into baking paper and put in fridge to set.
    Store in fridge

Tip

The colour and taste of your Berry Bounty Bites will change depending which berries you use, red berries end up a pretty pink colour, whilst blackberries or blueberries end up purple. They are all delicious! Enjoy! tmrc_emoticons.)
