Lovely recipe!
Doubled the quantities and used unsweetened almond milk instead of coconut cream as I wanted a more neutral flavour. Used powdered stevia instead of xylitol. Used 4 eggs instead of 6 for the double quantity. Worked perfectly. Will definitely be making this regularly.
Really really lovely and smooth
used these switch ups - can of coconut cream org. , 60g erythritol, 2 squirts of stevia vanilla ( Nirvana health products)
Very delicious! Enjoyed by all 👌🏻
margperth: This has been made in TM31 successfully. Could reduce water to 600g.
Loved it and will surely make again. I found it quite sweet enough with 40g xylitol. I added chopped banana on top for our guests who weren't eating LCHF and they loved it too.
I might try it with cream next time as that's a lot lower in carbs, but using the coconut milk worked beautifully and I love d the coconut flavour.
thanks
All I can say is YUM.....
i tried it without xantham gum but it was runny and so i too added the gum and it was perfect.. i also lessend the sugar and it tasted good not sweet at all though but we dont mind that. and we made it with chocolate instead of lemon.. we have never had lemon custard.. ill try it one day.
Love the recipe thanks
Thank you so much for this recipe! I left out the lemon and used cream instead of coconut milk. I initially left out the xantham gum but it was thin, so I added a tsp and cooked a bit longer and it was perfect. A beautiful thick custard. Thanks again!
