Choc Fudge Cupcakes
- 180 g almonds
- 40 g cocoa powder
- 80 g xylitol
- 1 tsp baking powder
- 120 g unsalted butter
- 3 eggs

- Pre heat oven 160 deg fan forced or 170 conventional
- Place almonds, cocoa, xylitol and baking powder, mill 20 sec/ speed 10/ mc on
- Weigh in butter and eggs, mkix 15 sec / speed 4 / mc on
- Scrape down and blend 30 sec / speed 4 /mc on
- Divide mixture into 12 cupcake moulds in a muffin pan
- Bake 25 mins
Tip
Can be baked as a cake 20x20, add 5 mins cooking time
Can be topped with nuts or berries
