  • 2 teaspoons baking powder
  • 2 eggs
  • 1 lemon, juice and finely grated zest

Recipe's preparation

  1. 1. Preheat oven to 180c. Line a muffin tray with paper cups (I used silicone ones) and drop a teaspon of lemon curd to each cup. 

  2. 2a. If you don't have time to softened your butter to a room temperature (like I did), put them into the bowl for 3-5 secs speed 5 before putting the rest of the ingredients in.

    2b. If the butter is softened then put all the ingredients in to the bowl except the lemon juice - speed 5 10-15secs until all combines into a thick batter.

  3. 3. Put in the lemon juice and mix for 5 secs speed 3 until the juice is mixed into the batter.

  4. 4. Add the batter to the muffin cups, blobbing it on top of the curd, until the mixture comes three-quarters of the way up.  Smooth the tops, then place on a thick oven tray and bake for about 20 minutes.

  5. 5.Remove from the oven, unmould each pudding onto a small plate or shallow bowl, spooning over any lemon curd that has stuck to the bottom (because I used silicone cups, the puddings & lemon curd came off pretty easily)

  6. 6. Serve with custard, cream or ice cream.  You could also heat up any remaining lemon curd in a microwave and spooning it over.

Tip

This recipe has been converted from one of Nigella's. I've tweaked the ingredients' weight slightly to adjust to TM's scale. Also, the original recipe calls for 6 ramekins (8cm diameter x 4cm deep) to bake the batter into; in which case you need to grease the ramekins before putting the lemon curd & batter in. I don't have the ramekins and found using the muffin tray is much easier. The batter fits perfecly to my 12-cups muffin tray - quantity & cooking time will vary if you use different size muffin tray. 

 

I haven't tried it but I think it'll also be delicious to add some shredded coconut into the mixture! tmrc_emoticons.)

    This is a great recipe followed it as per recipe. Turned out just beautiful so good in fact i tried the same recipe but where you said lemon i used orange (then used lemon curd under the orange pudding it was something else). Then i made orange curd to put under the orange pudding was also delicious. The problem is i am now asked by grandchildren to make them every time we see them.

    This was a great recipe.  I made mine in ramekins and used 3 tsp lemon curd and then cake on top - I made the mistake of letting them sit a little long and the lemon curd was soaked up into the cake - served them with cream and everyone loved them - lovely and light

    These were so good, I added only 60g sugar, this was plenty but, I accidently added the lemon curd to the cake mixture, I think they were great!! So I guess it had double curd. Thanks for a great recipe.

    These lemon puddings are delicious.  Only thing I didn't do when I cooked them a second time was put the lemon curd in the bottom of the silicone moulds as I found it really dried out and went brown.  What I did was just served them with the lemon curd poured over the top with ice cream on the side.  Yum!  They are to die for!  Delicious!
