Ingredients
Moist Chocolate Cupcakes
- 110 grams white sugar
- 100 grams brown sugar
- 150 grams plain flour
- 40 grams cocoa
- 3/4 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg
- 120 grams Milk
- 45 grams vegetable or canola oil
- 1 teaspoon vanilla essence
- 110 grams Boiling water

1. Preheat oven to 175degrees
2. Add all the dry ingredients to the mixing bowl and mix 6sec/speed6
3. Add all wet ingredients (exept boiling water) and mix 6sec/speed6, scrape down side and mix again
4. Add boiling water and mix 10sec/speed4
5. Pour mixture into cupcake tins and bake for approx. 20mins, or until toothpick comes out clean
Tip
The mixture will be quite runny. Top with a buttercream icing.

Easy recipe and they look yummy! Being sent to school for birthday cupcakes!
Made these for a umptenth time today but was on autopilot ... didn't read the instructrions, just chucked everything in and blitzed. Could have been for 10 seconds, could have been for 100 - was so tired, who knows! Still turned out delicious and most importantly, turned my teenagers from gumpy just-home-from school boys to delightful angels. Well, at least I'm not lying about the cupcakes being awesome!!
Tested this recipe out and the cupcakes were perfect! The instructions were easy to follow and the ingredient list were all the basics you'd have in the kitchen. I'm really impressed how these were moist and were just the right amount of sweetness.

Fantastic result. I doubled the mix and added some instant coffee to the boiling water to make it very similar to The Barefoot Contessa's iconic chocolate cake. Doubling worked fine ... just add a few extra seconds to the mixing times. Thank you!

When I saw the ingredient included boiling water I was worried . But these are moist and chocolate. Light with bite but not dense. A good basic chocolate cup cake recipe!
