Ingredients
Marshmallow base mix
- 10 g gelatine
- 70 g cold water
- 140 g water
- 240 g white sugar
- 5 g vanilla essence
- 5 g lemon juice, freshly squeezed
Coatings
- dessicated coconut, toasted or untoasted, to garnish
- cornflour for dusting
- icing sugar for dusting

1. Line a slab or lamington tin with baking paper coming up and over the sides. Choose the tin size based on the thickness of the marshmallow required.
2. Place cold water into a small bowl and gradullay add in gelatine, let stand for 5 minutes.
3. Place sugar into mixing bowl and mill for 5 seconds/speed 9, scrape down sides of the bowl.
4. Add the 140g of water into the thermomix bowl and heat 15 mins/100oC/speed 2
5. Add gelatine mixture and combine 2 mins/100oC/speed 2 with no MC. Then leave to cool in the TM bowl for 30 mins or until temperature falls below 50oC.
6. Insert butterfly and add vanilla and lemon juice and mix for 7 mins/speed 3.5 until thick and creamy.
7. Pour into prepared tin, put aside to set (approx. 1 hour).
8. Cut into desired shape and dust or coat with toasted coconut, cornflour or icing sugar.

Sorry to hear you haven't had success with the marshmallows, did you ensure the gelatine was gradually added and dissolved completely?
twice made and 2 flops very runny outcome both times.
