Ingredients
Sorbet
- 100 g raw sugar
- zest of 1 lime, shallow peeled to avoid the white pith
- 3 Limes, flesh only
- 300 g fresh pineapple pieces, cut into chunks
- handful mint leaves
- 1 egg white, (optional, may be omitted)
- 400ml can Coconut Milk or Cream, frozen into cubes
- 600 g ice cubes

1. Mill sugar & lime zest 10sec/sp9. Scrape down & repeat if required until a fine zest is achieved.
2. Add lime flesh, egg white (raw or cooked - see tips), mint and pineapple pieces, blend 10sec/sp5.
3. Add the frozen coconut milk/cream & ice and crush aprox 1.5-2mins/sp9, using the spatula thru' the hole in the lid with a side-to-side movement, to help keep the ice moving.
4. Serve immediately or transfer to a Thermoserver to keep chilled until you're ready to serve.
Tip
Makes 2L.
If you're not organised enough to have frozen the coconut milk, simply grind a handful of dessicated coconut with the sugar at the start.
If anyone is allergic to egg white or is pregnant, simply leave out the egg white. In this case, it will be a granita, not a sorbet and will be slightly more granular in texture.
Or alternately, before you start, cook the egg white as follows: insert butterfly to clean & dry bowl then add egg white. Whip & cook 4mins / 70 degrees / speed 3.5. Set aside to cool, clean & dry mixing bowl then start as per recipe.
If any sorbet remains uneaten, freeze it in ice-block moulds for the kids to lick another day!
For a more adult treat, splash some Malibu over the top of each serve!

Super-yummy! This pina-colada sorbet had just the right balance of tart-sweetness. Such a success that my husband went back for seconds...and thirds! Btw, the second time we made this with slightly less ice (400g) which gave the recipe even more 'POW'.
