Ingredients

Base layer

  • 100 grams almond meal
  • 85 grams Rice malt syrup
  • 100 grams Coconut, shredded
  • 55 grams raw extra virgin coconut oil, melted
  • 4 tablespoons chia seeds
  • 4 heaped tablespoons raw cacao powder, (use more if you prefer yours rich)
  • 1 teaspoon vanilla essence
  • 1 pinch himalayan sea salt

Mint Layer

  • 1 avocado
  • 85 grams Maple syrup
  • 75 grams raw extra virgin coconut oil
  • 150 grams Coconut, shredded
  • 1 teaspoon Peppermint Extract
  • 1 pinch himalayan sea salt

Chocolate layer

  • 30 grams raw extra virgin coconut oil, melted
  • 2 tablespoons Maple syrup
  • 30 grams raw cacao powder
  • 1/4 teaspoon vanilla extract
  • 1 pinch himalayan sea salt

Recipe's preparation

    Base layer
  1. Line a 20cmx20cm baking dish with foil.

    Mix the almond meal, rice malt syrup, coconut, melted coconut oil, chia seeds, cocoa and vanilla. 

     

    Press the mix using the back of a spoon firmly into the tray, sprinkle with salt and place in the freezer to set for 5 – 10 minutes.

  2. Mint layer
  3. Place ingredients in mixing bowl and mix for 60 sec/Speed 5-9 increasing gradually. Scrape the sides of the bowl with the spatula and repeat. Smooth mixture into prepared dish and stick back into the freezer for another 10 minutes.

  4. Chocolate layer
  5. Gently warm coconut oil until it is melted and combine with maple syrup. Stir well.

     

    Pour over chilled bottom layer and return to the freezer for about 15 minutes, or until the chocolate layer is hardened.

    Once set, remove from the tin and chop into little squares.  Keep in a container in the fridge or freezer depending on preferences.

    Delicious, substituted almonds with cashews due to alergy, not sure why when cutting the 1st and 2nd layers were parting, I just pressed them back together and plated up 😋

    Kids loved this slice. I felt there was too much base to filling and not sure I liked the chia seeds in the base but overall a real crowd pleaser.

    My kids both told me that this was delicious! I'd been nervous about trying it out on them, as they are very fussy! This is not strictly paleo because of the rice syrup but it could be easily substituted. So glad I tried this recipe!! Thanks for sharing.

    This is the first raw desert i have ever made... and wow! Its perfect! Im trying to loose my baby weight and am craving chocolate like crazy...this hit the spot big time! Loved it and how easy it was to make

    Divine!!! Tastes as good as it looks. The avocado stayed lovely and green. I used 160g of frozen avocado pieces and used rice malt syrup instead of maple syrup because I ran out halfway. Love it, even my family who don't all eat paleo enjoyed it. Will definitely make this for Christmas tmrc_emoticons.-) Thanks for sharing the great recipe.

    It does appear to, I have kept mine for a couple of days in the freezer or fridge and it kept its colour fine and didnt brown
