Mousse
- 150 g rhubarb, Diced
- 250 g strawberries, Hulled, Halved
- 100 g xylitol, Or Sugar/Sweetener of choice
- 120 g water
- 10 g gelatin
- 170 g Greek yoghurt

I'm cooking this todayRecipe's preparation
1. Place Rhubarb and Strawberries into TM bowl and cover with Xylitol (can let it sit for 20mins).
2. Add Water and cook 9mins 80degrees Sp1.
3. Add Gelatin and mix to combine.
4. Place TM bowl into fridge till jelly like mixture is set. Takes 2-3 hours.
5. Replace TM bowl and add Yoghurt, mix to combine.
6. Serve immediately or place in sealed container and keep in fridge till ready to serve.
7. Serve on its own or with pure double cream and fresh strawberries.
Tip
Keeps well in fridge for a couple days in a sealed container.
