Ingredients

Pastry

  • 300 grams plain four
  • 130 grams Cold Butter, Cubed
  • 6-7 tbsp chilled water
  • 1 tbsp Milk
  • 2 tbsp raw sugar

Filling

  • 600 grams Green Apples cored, 4-6 apples
  • 150 grams raw sugar
  • lemon peel from half a lemon
  • 400 grams water
  • 1 tbsp lemon juice

Recipe's preparation

    Pastry
  1. Place flour, butter and 1tbsp raw sugar in TM bowl and mix for 5 seconds on speed 6.

    Add 4tbsp chilled water and set dial to Closed lid"Closed lid" , knead for 1 minute on Dough mode"Dough mode" speed.  As the pastry is kneading you may need to add an extra 2-3tbsp chilled water until the pastry comes together.

    Wrap pastry in breadmat or wrap in gladwrap.  Refrigerate for 30 minutes.

     

  2. Filling
  3. Preheat oven to 180C.

    Place sugar and lemon rind in bowl and mill for 10 seconds on speed 9.

    Peel and core apples and cut in thick wedges.

    Place apple in TM bowl with the milled sugar, rind, lemon juice and water and cook for 12 minutes at 100C, Counter-clockwise operation"Counter-clockwise operation" , speed 1.

    Remove apples from syrup with a slotted spoon and set aside to cool.

    Cook remaining syrup for for 15 minutes at 100C on speed 1 and MC OUT, so the syrup reduces.

  4. Roll pastry into a round shape measuring approx 35cm.  You can roll the pastry on a breadmat or between 2 pieces of gladbake.   Place cooled apple in the middle of the pastry so there is approximately 7cm border.  Fold pasty edge up and around the apple, leaving it partically open on top.

    Brush milk over the pastry and spinkle with extra raw sugar.

    Bake for 40 minutes or until pastry is golden brown.

    Spoon some syrup over the apples and serve with vanilla custard or icecream.

Tip

Add a handful of blueberries for extra flavour and colour once you have spooned apple onto pastry.

 

You will have left over apple syrup, some ideas for use are: poured over pancakes, icecream, natural yoghurt, sundae topping, french toast.  You can also add a little cinnamin to spice it up.

    Delicious apple pie, and would have been even better with some mixed berries, or perhaps some added cinnamon!
