Ingredients

Sooji halwa

  • 450 grams semolina
  • 200 grams Ghee
  • 1/2 teaspoon vanilla essence
  • 1/2 teaspoon almond essence, (optional)
  • 440 grams brown sugar
  • 150 grams Desiccated Coconut
  • 140 grams sultanas
  • 150 grams flaked or slivered almonds
  • 200 grams warm water

Recipe's preparation

    This is an old family recipe from my Indian heritage, passed down through the years!
  1. Weigh semolina and ghee into the bowl, place lid and measuring cup on and cook 5 min/70C/speed 1.
  2. Scrape down the sides and cook a further 5 min/70C/speed 1.
  3. Add essences, sugar, and coconut and mix 20 sec/speed 5.
  4. Add sultanas and almonds and mix 10 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 6. The bowl will be quite full but that's ok as it will condense when you add the water.
  5. Add water and cook 20 min/100C/Counter-clockwise operation"Counter-clockwise operation" /speed 1. The consistency will be a little sticky but will come together a bit more once it sets.
  6. Empty the sooji halwa into a ceramic bowl and allow to cool as this will help it set. Sprinkle with extra almonds and serve warm or cold as desired.

Tip

Listen for air pockets in step 3 as you may need to pause and give it a stir with the spatula.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
