Ingredients

Base

  • 75 grams Raw macadamias
  • 75 grams Arnotts Arno Shortbread
  • 40 grams Butter

Cheesecake Filling

  • 150 grams raw sugar
  • 1 lemon zest
  • 150 grams sour cream
  • 4 eggs
  • 500 grams cream cheese

Strawberry Topping

  • 100 grams strawberries, fresh or frozen
  • 50 grams caster sugar
  • 10 grams freshly squeezed lemon juice
  • 1 teaspoon agar agar or gelatine powder

Recipe's preparation

    Base
  1. 1. Preheat oven to 160o C. Grease and line an 18-20cm springform cake tin and set aside.


    2. Place macadamias, biscuits and butter into mixing bowl and blend 10 sec/speed 9, or until a crumble consistency is achieved.


    3. Press crumb mixture evenly into the base of the cake tin and    bake for 10 minutes. Remove cake tin from oven and set aside to cool.

  2. Cheesecake Filling
  3. 1. Place sugar and lemon zest into a clean, dry mixing and mill        10 sec/speed 9.               


    2. Add all remaining cheesecake filling ingredients and blend            20 sec/speed 6. Scrape down sides of bowl then mix                   10 sec/speed 6.


    3. Pour cheesecake mixture over the cooked base and wrap           cake tin with aluminium foil. Place tin into Varoma dish and            1.2L water into the mixing bowl. Secure Varoma lid, place Varoma into position and steam 60 min/Varoma/speed 1.       


    4. Check to see that cake is set in the middle. If not, re-wrap and cook for a further 15-20 min/Varoma/speed 1. Allow cake to cool slightly then place into the refrigerator for a minimum of 4 hours to set.

  4. Strawberry Topping
  5. 1. Place strawberries, caster sugar and lemon juice into the mixing bowl and cook 3-4 min/90oC/speed 4.


    2. Place agar agar or gelatine into mixing bowl and cook                  1 min/90oC/speed 3.


    3. Spread strawberry topping over the top of chilled cheesecake and return to the refrigerator for a further 20-30 minutes, or until set.      4. Remove cake from springform tin and serve chilled.

Tip

Other than preparation and baking/steaming time this desert does need time to cool in the fridge for approximately 4 and a half hours.
