Ingredients

Traditional Welsh Cakes

  • 226 grams self-raising flour
  • ½ tsp mixed spice
  • tsp ground cinnamon
  • ¼ tsp salt
  • 56 g Butter
  • 56 g lard
  • 56 g caster sugar
  • 1 pieces egg
  • 1 to 2 tbsp Milk, if required to bring dough together

Recipe's preparation

    Method
  1. Add Self Raising Flour, mixed spice, ground cinnamon and salt into the mixing bowl Closed lid"Closed lid" . Place the lid on with MC in position and using Turbo mode process for 3 - 4 (1 second) bursts to sift and mix evenly.
  2. Add butter and lard. Replace the lid with MC in place and again using Turbo Mode in 1 second bursts, process 5 - 6 times until mixture has been rubbed together and resembles bread crumbs.
  3. Add the caster sugar, currants or sultanas, egg and half of the milk to the mixing bowl Closed lid"Closed lid" . Process 10 seconds, speed 3, with reverse Counter-clockwise operation"Counter-clockwise operation" enabled to combine ingredients.
  4. Select the Dough Dough mode"Dough mode" function and knead the dough for 30 seconds until it comes together. Add more of the milk ONLY if needed to bring the dough together.
  5. Transfer the dough to a lightly floured Thermomat or bench top and form into a ball. Flatten ball into a disc and roll out to ¼ inch thickness using flour as necessary on rolling pin to prevent sticking. Cut into rounds with a scone cutter. Reform remaining dough and repeat until all of the dough has been used.
  6. Preheat griddle pan or heavy based fry pan over medium heat. grease lightly with butter. Place Welsh Cakes into hot pan and cook for 3 to 4 mins per side or until golden brown and cooked through.
  7. Place a little extra caster sugar into a small bowl and dip one or both sides of each Welsh Cake into the sugar while still hot. Shake off excess and place on wire rack to cool.

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
