Ingredients

Turkish Delight Ice Cream

  • 600 g water
  • 400 g sugar
  • 35 g Gelatine powder
  • 165 g icing sugar
  • 95 g cornflour
  • 1/4 teaspoon cream of tartar
  • 2 teaspoons Rose essence
  • pink food colouring
  • 75 g white sugar
  • 2 egg yolks
  • 500 g pouring (whipping) cream
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • cornflour, extra for dusting
  • icing sugar, extra for dusting

Recipe's preparation

  1. Turkish Delight Liquid

    1. Add water, sugar and gelatine powder to the mixer bowl. Cook for 4 minutes/Varoma/MC On/Speed 2.
    2. Cook for a further 18 minutes/100/MC Off/Speed 1.
    3. Remove lid, scrape down sides if required.
    4. Cook for a further 18 minutes/100/MC Off/Speed 1.
    5. Add icing sugar, cornflour, cream of tartar, rose essence and pink food colouring (to achieve desired colour).
    6. Mix 30 seconds/MC On/slowly increasing speed up to Speed 4 until all is combined.
    7. Add more pink food colouring if required.
    8. Cook 7 minutes/Varoma/MC Off/Speed 1.
    9. Mix 30 seconds/MC On/Speed 3.
    10. Tip into a bowl whilst preparing the ice cream mixture (or leave in mixer bowl and set aside if you have a second mixer bowl to continue the ice cream mixture in).

    Note: Approximately 1.5 cups of this is used in the ice cream. There will be extra leftover to make Turkish Delight, please see below.

    Ice Cream Mixture

    11. Clean and dry mixer bowl or start in a new bowl if you have two.
    12. Place sugar into mixer bowl and mill 20 seconds/MC On/Speed 9. Scrape mixer bowl down.
    13. Add egg yolks, cream, vanilla and salt. Cook 6 minutes/80/MC On/Speed 4.
    14. Add approx 1.5 cups of the Turkish Delight liquid into mixer bowl. Mix 30 seconds/MC On/Speed 3 to incorporate.
    15. Taste and add further Turkish Delight liquid or some more rose essence, depending on how strong you would like the flavour. Add further pink food colouring as required. Mix again 20 seconds/MC On/Speed 3 to incorporate.
    16. Pour ice cream mixture into silicon ice cube trays and set aside to cool before placing into freezer.
    17. Freeze until frozen solid.

    Turkish Delight

    18. Line a small baking tin with baking paper and pour remaining Turkish Delight liquid into the tray before it begins to set.
    19. Set in fridge until solid.
    20. Once set, use a sharp knife to cut into required size pieces.
    21. Coat generously in the extra cornflour and set aside for approximately 30 minutes.
    22. Coat in the extra icing sugar and store in an airtight container in the fridge or a cool dry place. Note: if the climate is hot or humid doing this icing sugar step tends to make the Turkish Delight sweat. It is recommended to skip this step and just do the cornflour.

    Churning Ice Cream

    23. In a clean and dry mixer bowl add half of the ice cream cubes.
    24. Blend for 20 seconds/MC On/Speed 9.
    25. Scrape down sides of bowl and repeat a couple of times until ice cream is churned to desired consistency.
    26. Serve immediately topped with a little bit of Turkish Delight (see below) or put in a freezer safe container for eating later.
    27. Repeat with remaining half of the ice cream.
