Ingredients

Green Prawn Curry

  • 1 onion, Quartered
  • 1 tablespoon olive oil
  • 2 tablespoons green curry paste
  • 400 grams light coconut milk
  • 300 grams Medium Raw Prawns, Peeled
  • 250 grams green beans, sliced
  • 1 red capsicum, sliced
  • 220 grams hokkien noodles

Recipe's preparation

    Green Prawn Curry
  1. Chop Onions 3 Seconds, Speed 7, Scrape down.

    Add oil.

    Sauté  onion for 5 Minutes, Varoma, Speed 1

    Add curry paste. 

    Cook for 1 Minutes, Varoma, Speed 1 or until fragrant. 

    Add coconut milk. 

    Bring to boil. 6 Minutes, 105C, Speed 1, MC off

    Reduce heat to low. 

    Simmer for 6 Minutes, 95C, Speed 1, MC off or until thickened slightly.

    Add Capsicum and Beans.

    Simmer for 5 Minutes, 95C, Reverse, Speed 1.

    Add prawns.

    Simmer for 5 Minutes, 95C, Reverse, Speed 1 or until beans are tender. 

    Cook Hokkien noodles according to directions. 

     

    Serve prawn curry over Hokkien noodles.

Tip

Cook's notes

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C.

We use Australian tablespoons and cups: 

1 teaspoon equals 5 ml; 

1 tablespoon equals 20 ml; 

1 cup equals 250 ml.

All herbs are fresh (unless specified) and cups are lightly packed.

All vegetables are medium size and peeled, unless specified.

All eggs are 55-60 g, unless specified.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Easy to make and lovely taste and texture. I was a bit concerned at first because my husband doesn't like hot dishes so I reduced the green curry paste to 1.5 tblsp. He enjoyed the dish although did ask for the curry paste to be reduced a bit more next time. Prawns were nicely cooked. Thanks for the recipe.
