Thermomix Tuna Potato Bake

  • 75 g Butter
  • 1 leek, sliced
  • 75 g plain flour
  • 1 tablespoon Dijon mustard, or to taste
  • 2 cans 425g tuna in springwater, drained & flaked
  • 150 g Frozen peas and corn
  • 60 g Fresh Baby Spinach
  • 3 piece spring onions, sliced
  • 155 g cheese, mozarella, parmesan & cheddar blend or pre-bought pizz
  • 3 pieces potatoes, large & washed, unpeeled & thinly sliced

Recipe's preparation

    Preparation
  1. 1. Pre- heat over to 220deg (200 deg fan fouced)
  2. Cheese Blend
  3. Add 50g each of mozarella, parmesan & cheddar (or to taste). Grate 5 seconnds, speed 8. Set aside
  4. Potatoes
  5. Slice your potatoes using the Thermomix cutter - slice mode (side 1 facing up, thick slice)
  6. Tuna Potato Bake
  7. 2. Place butter into bowl and melt 2minutes, 60 degrees, speed 1
  8. 3. Add leek and saute 5 minutes, 100 deg, speed 1
  9. 4. Add flour and milk to bowl andThickening"Thickening"
  10. 5. Add dijon mustard, tuna, peas & corn, baby spinach and 1 cup of the grated cheese blend and stir through with the spatula until all combined
  11. 6. Transfer mixture to the prepared baking dish. Arrange potatoe slices over the top, slightly overlapping. Sprinkle with the remaining cheese blend
  12. 7. Bake in pre-heated oven for 45 minutes or until potatoes are cooked through. Let stand for 10 mintues before serving

Tip

If not making in a TM6 - add step 4 cook for 10minutes, 90degrees, Speed 4 (or until thickened to your likening)
