Ingredients

  • 50 gram Sultana Bran
  • 180 gram SR flour
  • 180 gram sultanas
  • 2 teaspoon cinamon
  • 125 gram Butter, softened
  • 50-100 grams brown sugar, vary amount to taste
  • 2 eggs
  • 1 cup yoghurt
  • mashed banana or stewed fruit, optional but add extra taste & moisture

Recipe's preparation

  1. Cream butter & brown sugar - speed 5 for 15-20 seconds, then add butterfly and cream for 20-30 seconds, speed 4

  2. Remove butterfly.  Add eggs and mix 15-20 seconds speed 4

  3. Add sultana bran, self raising flour, sultanas, cinamon, yoghurt and banana/stewed fruit if using

  4. Mix Counter-clockwise operation"Counter-clockwise operation" 20-30 seconds, speed 2

  5. You may need to stir with spatula to ensure all is mixed together

  6. Line muffin tray with muffin cases

  7. Pour mixture into muffin cases & bake 180degrees for 15-20minutes or until cooked (a skewer comes out cleanly)

Tip

These are a really moist muffin - especially if you add the banana or stewed fruit

    Love these -great to use up Sultana Bran... Worked a treat!

    Cinnamon is gorgeous in this!

    i used currants instead of sultanas (all I had) with 70g sugar - and used 1/2 cup coconut flour (homemade after coconut milk leftover pulp- dried in oven and mill) with baking powder and rest SR Flour.

    I made my own yoghurt too... Feeling a bit clever! 

    Thank you for sharing this... It's on my do again list - kids will be happy with lunchbox tmw.
