Beef & Vegetable Casserole
- 3 cloves garlic
- 1 onion
- 30 grams olive oil
- 1 level teaspoon cinnamon ground
- 1 level teaspoon Cummin Ground
- 1 level teaspoon Cardamom ground
- 400 grams ripe roma or vine tomatoes
- 500 grams Beef, Diced into 2 - 3 cm cubes
- 300 grams water
- 1 tablespoon Vegetable stock paste
- 2 carrots, Approx 350 grams
- 3 - 4 potatoes, Approx 350 grams
- 4 bay leaves, dried

Place garlic into TM bowl. Chop 4 seconds / speed 7
Place onion into TM bowl. Chop 3 seconds / speed 7
Scrape down the sides of the TM bowl. Add 30 grams olive oil.
Saute 3 minutes / 100 degrees / speed"Gentle stir setting"
Add the cinnamon, cummin & cardamom.
Saute a further 2 minutes / 100 degrees / speed "Gentle stir setting"
Add 400 grams tomatoes. Chop 5 seconds / speed 5
Cook 3 minutes / 100 degrees /"Counter-clockwise operation" speed 1.5
Add diced beef, vegetable stock paste, water and bay leaves.
Cook 10 minutes / 98 degrees /"Counter-clockwise operation" speed 0.5
Add carrots & potatoes.
Cook 60 minutes / 98 degrees / "Counter-clockwise operation" speed "Gentle stir setting"
Tip
Instead of potatoes and carrots a mix of sweet potato, carrot and potato is lovely. A total of 700 grams

I’ve been looking for a thermie stew for ages and am so glad I came across this one!!!
absolutely loved it!
I also make a bread load load to wipe up the left over stew.
We found it wasn't salty enough, so we had to add more of the vegetable stock paste, and the potatos did end up mush, but it was fine anyway. Will definitely try it again at some point.

I only added 200ml water and used tinned tomatoes. Also added my potatoes in at 35mins to go and then added peas and corn at the end and cooked for an extra 10mins. Served with brown rice. Beautiful consistency and amazing smell and taste!
Very watery (even after adding some cornflour) and potatoes just simply melted away to nothing so end result was disappointing. Overall flavour is nice though.
Switched tomatoes. 1 tomato and approx 100gm of tomato ketchup - sauce used in pizza base.
