Ingredients

Chicken and leek pie

  • 1 portion EDC shortcrust pastry
  • 1 fillet chicken breast, Cut into small cubes, seasoned with salt and pepper, to taste
  • 2 Large leeks, White part
  • 1 carrot, Peeled, chopped
  • 1 zucchini, Chopped
  • 150 grams Butter, Chopped
  • 1 heaped teaspoon TM chicken stock
  • 1 level teaspoon Dijon mustard
  • 6 Leaves parsley, Pulled into bits
  • 60 grams Milk
  • 1 egg, Lightly mixed with fork

Recipe's preparation

  1. Prepare EDC shortcrust pastry, wrap in thermomat, refrigerate.
    Preheat the oven to 200C, fan forced.
    Add leeks, carrot and zucchini to Closed lid"Closed lid" , blend for 3 seconds, speed 5.
    Scrape down the sides of Closed lid"Closed lid" with a spatula.
    Add butter and sauté for 8 minutes, 120°C, speed Gentle stir setting"Gentle stir setting" .
    Add chicken, stock, mustard and parsley to Closed lid"Closed lid" , sauté for a further 6 minutes, 120°C, speed Gentle stir setting"Gentle stir setting" .
    Add milk to Closed lid"Closed lid" , simmer for 5 minutes, 80°C, speed Gentle stir setting"Gentle stir setting" .
    Spray pie dish with olive oil thouroughly.
    Roll pastry out thinly and place in pie dish, making sure there is enough to fold back onto the pie to form the lid.
    Pour mixture into the prepared dish.
    Fold the excess pastry back onto the pie to create a lid.
    Brush lid with egg.
    Slice a few small openings into lid with a knife.
    Put dish into oven for 20 minutes.
    Serve hot.

Tip

Serve the dish with a fresh salad, it will balance the meal off perfectly.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
