Ingredients
Chicken quinoa salad
- 60g pine nuts
- 900g water
- 20g olive oil
- 160g quinoa
- 400g chicken tenderloins
- 75g sundried tomato strips
- 75g dried cranberries
- 1/2 red apple, diced
- 1 handful Baby Spinach Leaves
- 20g coconut oil
- 20g Maple syrup
- 50g lemon juice
- approx 15 Basil leaves
- pinch of salt and pepper to taste

1. Place 60g pine nuts in bowl, roast 8 minutes/100C/speed 1, set aside.
2. Place 900g water and 20g olive oil into bowl. Place simmering basket into bowl and weigh in 160g quinoa. Take simmering basket and quinoa out of bowl, rinse under tap and return to bowl.
3. Place 400g chicken tenderloins onto varoma tray. Place varoma on top of lid on bowl. Cook 19 minutes/Varoma/speed 2. Fluff quinoa with fork and set aside with chicken in fridge to cool. Empty water from bowl.
4. Place 75g sundried tomato strips and 75g dried cranberries in bowl, chop on turbo/1 second (repeat until desired consistency achieved). Set aside.
5. Place 20g coconut oil, 20g maple syrup, 50g lemon juice, 15 basil leaves, pinch of salt and pepper into bowl. Chop 10 seconds/speed 7.
6. Place cooled quinoa into serving bowl. Slice chicken tenderloins and add to bowl, add sundried tomatoes, cranberries and handful of baby spinach to bowl. Dice 1/2 red apple and add to bowl. Drizzle dressing over salad, sprinkle with pine nuts, season to taste and serve.

YUM! I made a 2/3 serving of this with Moghrabieh Couscous (kinda like large balls of couscous) and it was just divine. I live by myself and it saves really well in the fridge, giving me a scrumptious, effortless lunch/dinner for a couple of days. Happy days!
