Chicken Satay with peanut sauce

  • --- Marinade
  • 2 level tbsp fish sauce
  • 2 level tbsp soy sauce
  • 2 portions Eshallots (brown and purple), Chopped
  • 1/2 cup of coconut milk
  • 2 level tbsp pineapple juice
  • 1 level tbsp condensed milk
  • 1 level tbsp brown sugar
  • 2 sprigs fresh coriander
  • 1 level tbsp Sriracha sauce
  • 2 level tbsp roasted Sesame Seeds
  • 1kg --- boneless skinless chicken thigh, Cut into strips
  • Peanut sauce
  • 1/2 level teaspoons lemongrass
  • 1/2 level teaspoons garlic
  • 1/2 level teaspoons fresh ginger
  • 1 heaped tablespoons water
  • 1 level tbsp vegetable oil
  • 1 level teaspoons tamarind paste
  • 1/2 --- cup of peanut butter
  • 1/2 level tbsp Soy
  • 1/2 cup of coconut milk
  • 1 level tbsp freshly squeezed lime juice
  • 1/2 level tbsp brown sugar

Recipe's preparation

    Marinade steps
  1. Combine all marinade ingredients into bowl blend for 6 seconds @ speed 7 mc on get a flat bottomed dish like casserole dish leave enough to hold the chicken maridande the chicken in the fridge for 3 hours
  2. Peanut sauce
    chop lemon grass, garlic,ginger 1 table spoon of water and blitz in Closed lid"Closed lid" for 30 seconds @ speed 7 to make a paste add remaining satay ingredients and cookClosed lid"Closed lid" @ 60 deg on speedGentle stir setting"Gentle stir setting" and 5 minutes if not cooked enough extend out to 8 minutes of cook time but 5 minutes should be enough
  3. Remove chicken from marinade put pieces on to a skewer or u can keep fillets in one piece and bbq or grill add salt and pepper to season bbq grill till chicken is chared

    serve with peanut sauce and lime wedges and extra coriander

Tip

If u don't have lemongrass put in a squeeze of lemon juice
