Ingredients
Chunky Spaghetti Bolognese - Hidden Veg
- 1 portions brown onion, (approx 150g) Cut into halves
- 2 portions garlic cloves, peeled
- 1 portions zucchini, (apron 150g, cut into pieces)
- 1 portions carrot, (approx 170g) Cut into 2cm pieces
- 20 grams olive oil
- 500 grams tomato passata
- 50 grams tomato paste
- 20 grams Worcestershire sauce, optional
- 1 tbsp Vegetable stock paste, Or meat stock paste
- 1 tsp dried oregano
- 1 tsp dried basil
- 30 grams Sweet chilli sauce
- 1 pinch salt, to taste
- 1 pinch pepper, ground, to taste
- 500 grams Beef mince

- Place onion, garlic, Zucchini & Carrot into mixing bowl and chop 3 sec/speed 9. Scrape down sides of mixing bowl with spatula. Chop again 3 sec/speed 9, scrape down sides of bowl.
- Add oil and cook 5 min/100°C/speed 2, without measuring cup.
- Add passata, tomato paste, Worcestershire sauce, stock paste, oregano, basil, sweet chilli sauce salt and pepper. Insert simmering basket into mixing bowl, break up mince and weigh into simmering basket, cook 7 min/Varoma/speed 2.
- Stir mince with spatula to break up and ensure even cooking, then cook for a further 7 min/Varoma/speed 2 or until cooked through.
- Transfer mince and sauce into a ThermoServer or large bowl and stir to combine, then serve with pasta and cheese of choice.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
