Ingredients
Beef Balsamic and Tomato Stew
- 1 large onion, quartered
- 1 clove garlic
- 4 rashers of middle bacon, trimmed
- 30 g olive oil
- 700 g Stewing, chuck or blade steak
- 2 medium carrots peeled and chopped
- 2 sprigs fresh thyme
- 40 g balsamic vinegar
- 400 g tin diced tomatoes
- 1 tablespoon vegetable stock concentrate
- 200 g water
- 50 g plain flour
- salt and pepper to taste
- 4 potatoes
- 100 g peas (frozen)

Place onion, garlic and bacon in TM bowl and chop for 3 seconds on speed 7
Scrape down the sides of the bowl and add oil and cook for 3 minutes, 100 degrees, speed 1
Add beef and cook for 5 minutes, varoma temperature, reverse, speed soft
Add carrots,potatoes, thyme, balsamic vinegar, tinned tomatoes, stock concentrate, water, flour and seasoning.
Cook for 50minutes, 100 degrees, reverse, speed soft.
Add frozen peas and cook for another 10 minutes, 100 degress, reverse, speed soft.

Tip
Cooking time for meat may vary depending on the cut of meat used. I cooked mine for the full 60 minutes to ensure the meat was nice and tender.

This is a really tasty dish using simple ingredients. The only difference we did was add chilli with the bacon and onion and seasoned the vegetables with cumin and oil (Ginger & Lemongrass) about 30 minutes before adding.
This is a great clone of the Beef Balsamic Tomato stew - I've made the original recipe a number of times but the addition of potatoes and peas was a great idea. It freezes beautifully tooo!
