Easy meatloaf

  • 500g Mince Meat
  • 1 cup Fresh whole meal breadcrumbs
  • 1 onion
  • 1 carrot
  • 1 cup zucchini
  • 2 heaped tablespoon Fresh herbs, Coriander, rosemary, basil
  • 1 egg
  • 2 tablespoons tomato sauce
  • 100 g BBQ sauce, ot tomato sauce
  • 1 clove garlic

Recipe's preparation

    Easy meatloaf
  1.  Place glove of garlic in thermos bowl, speed 5 x5 secs.  Add fresh herbs of choice speed 5 x3secs.  Add onion, carrot and zucchini speed 6x 5secs.  Add salt, pepper, egg, sauce and mince speede 6 x 10secs.  Shape mince into a 10cm x 18cm rectangle and place on baking tray lined with paper.  Bake 160c until firm to touch. Drain off excess fat.  Spoon BBQ sauce over top to glaze and bake a further 10 minutes.  Stand on tray 10 minutes before serving.

    Great recipe, however it did not explain when to use bread crumbs. So I added them same time as mince. And turned out fine Big Smile

    I wrapped mine in bacon rashers and baked in a loaf dish  for around an hour on 180 deg Celsius, it was delicious!
