Ingredients
Hokkien Noodle Chicken Curry
- 1 red capsicum
- 1 green capsicum
- 1 carrot
- 1 can baby corn spears, drained
- 1 package hokkien noodles (thick)
- 500 g chicken breast, 5cm cubes
- 1 can coconut cream
- 1 tbsp vegetable stock concentrate, basic cookbook
- 4 tbsp green curry paste
- 150 g water

Describe the preparation steps of your recipe
1. Slice capsicums & carrot into julienne strips and place into varoma dish along with baby corn spears, seperate and lay hokkien noodles on varoma tray
2. Slice chicken into cubes, approx. 5 cms, set aside
3. Add coconut cream, vegetable stock paste, curry paste & water to jug, mix ingredients together with lid & mc in place, spd 3, 2 seconds
4. Insert butterfly & add chicken to jug
5. Put lid on and place varoma into place, reverse, 25 minutes, varoma temp, spd 2.5
6. Place hokkein noodles & vegetables into thermoserver, pour over chicken and sauce mixture on top and mix together, put lid on thermoserver & let sit for 3 mins.
7. Serve with even amount of noodles, vegetables, chicken and sauce
Tip
Add any vegetables you like, i.e brocolli, snow peas, onion, water chestnuts
I used store brought green curry paste.
Vegetarian version omit the chicken add extra vegetable, tofu
hope you enjoy, this was easy to make, yummy and can be packed full of vegetables.
