Ingredients
Indian Rissoles
- 750 grams lamb mince
- 1 brown onion, quartered
- 5 sprigs fresh mint, leaves only
- 1 lemon, rind and juice
- 75 grams everyday curry paste, mild or hot (your own choice)
- 1 egg
- 1 pinches ground black pepper
- 1 slices bread

- Add 1 slice of bread into your bowl (roughly torn in pieces)
- Add 1 brown onion (quartered)
- Add 5 sprigs of mint (leaves only)
- Grate for 15 sec/speed 7
- Now add a pinch of black pepper
- Add rind of 1 lemon (no white pith)
- Add 75g Curry Paste
- Next add your mince
- Add 1 egg
- Mix for 15 sec/speed 6
- Using 1/4 cup as a guide use mixture to form 16 balls and place each into on a flat tray or dinner plate. As you make each flatten slightly.
- Cover and refrigerate for 30 minutes
- Preheat a greased pan on low-medium heat (with olive oil or canola spray)
- Cook, turning occasionally, for 12-15 minutes or until cooked through. Transfer to a food warmer or Thermoserver to keep warm. Serve with naan and tzatziki.
