Ingredients

Sausages

  • 8 sausages
  • 300-400 grams Basmati or Jasmine rice, +800g of water
  • 10 grams coconut oil
  • 1 onion, Peeled and quartered
  • 2 cloves garlic, Peeled
  • 1/2 tablespoon curry powder, Or as much as you like
  • 1 zucchini, Roughly chopped
  • 1 Large carrot, Cut into small pieces
  • 0.3 litres water
  • 400 grams Tinned tomatoes, Or fresh
  • 1 tablespoon vegetable stock concentrate

Recipe's preparation

  1. 1. Place rice into basket. Rinse thoroughly. Place into bowl.
    2. Pour over the 800g water. Attach lid.
    3. Place varoma on top.
    4. Place sausages in varoma. I do them in two layers, criss crossed, with space between each one.
    5. Cook at varoma temperature for 20 minutes on speed 2
    6. Once done and you have checked the rice is cooked, remove varoma and rice basket. Pour rice into insulated server and set aside. Set sausages aside.
    7. Empty water from the bowl.
    8. Add zucchini, onion and garlic to the bowl.
    9. Blitz on speed 9 for 5 seconds. Scrape down. Repeat.
    10. Add coconut oil and curry powder and cook at 100 degrees for 5 minutes on speed 1
    11. Insert whisk attachment (Please note: Because this is a curry your whisk will most likely stain. You can do it without the whisk but I find the sausages and veg end up chopped and resemble mince).
    12. Add carrots, water, tomatoes and stock concentrate.
    13. Cook at 100 degrees for 15 minutes, reverse on speed 1
    14. Meanwhile remove skins from sausages and chop into small chunks.
    15. Once the sauce is done, add the sausages.
    16. Mix on reverse, spoon soft for 2 minutes or until sausages are completely covered in the sauce.

    Loved this recipe, and loved the amount of vegies - great for kids as they couldn't get enough of it! It took quite a bit longer than the 30 minutes 'advertised', so you might want to alter that, Jacqui Stojcevski, as the rice alone was 20 minutes, but we will definitely be making it again.

    I tried this recipe last night, I cooked the rice for 30 minutes and it was still not cooked. Used 400g of rice and 800g water. The boys enjoyed the overall meal tmrc_emoticons.-)
