Ingredients
Risotto
- 1 onion or leek
- 2 cloves garlic
- 30 g olive oil
- 1 baby fennel
- 500 g chicken thighs, bite size
- 330 g arborio rice
- 1 cup white wine
- 750mls chicken stock
- 200 g pumpkin, diced
- 1 lemon
- 1/2 cup parmesan grated
- salt & freshly ground pepper

Add onion or leek, garlic and fennel to TM Bowl and chop 5 secs/speed 7.
Add oil and saute 2 mins/100oC/Speed 1 with MC off. Attach butterfly.
Add chopped chicken and cook 5 mins/100oC/Reverse/Speed soft."Gentle stir setting"
Add rice and white wine, cook 2 mins/100oC/Reverse/Speed Soft."Gentle stir setting"
Add stock and pumpkin, cook 15 mins/100oC/Reverse/Speed 1.
Pour risotto into Thermoserver and add zest of 1 lemon, and parmesan cheese, salt and pepper. Stir through and serve immediately!
Serves 4 - 6 people as a main size.

I often roast the pumpkin in the oven and add it in at the end - it just gives a sweeter roasted flavour.

Made this last night for hubby, kids and I. Loved it, but would recommend using the butterfly as the chicken did get quite shredded. The recipe indicates that it serves 2 but we had a huge bowl each and I have leftovers...having a bowl for lunch as I type! We used sweet potato instead of pumpkin and it was great. Thanks for sharing.
My 6 and 4 year old love this risotto. It is a very quick and easy meal.
