Ingredients
Pie
- 500 grams lamb mince, Lean
- 4 level tablespoons Olive Oli
- 2 level teaspoons vegemite
- 1 large onion, Chopped
- 6 spring onions/shallots, Sliced green part separated
- Frozen peas thawed, 1 cup
- 2 chicken stock (salt reduced), 2 cups
- 2 level teaspoons Worcestershire sauce
- 2 heaped tablespoons Tomato sauce / ketchup
- 4 scoops Potato mash, Warm
- 2 heaped tablespoons parmesan grated
- Butter, As much as you're allowed

Prepare potato mash and keep warm in thermoserver. Heat 2 tablespoons of oil in bowl varoma heat on "Gentle stir setting" .add mince and cook on varoma speed 2 until browned well, about 6-8 minutes. Add Vegemite stir and set aside. Add onion and chop 3 seconds speed 6 then add rest of oil. Cook on reverse speed 2-3 at varoma temp.for 6-7 minutes. Add white part of shallots after a couple of minutes cooking. Add sauces and peas and "Gentle stir setting" return mince to bowl along with stock. Heat thru and stir on reverse until well mixed, speed 3 temp 80. Season if necessary. Divide between 4 2 cup ramekins or a 2 litre pie dish. Top with potato mash To which green part of shallots has been added,and Parmesan. Pattern mash with a fork and top with little dabs of butter. Bake for 20 minutes or until nicely browned.
Tip
Add some extra veges of your choice to mix. If you prefer, make a roux of a tablespoon of corn flour and a little water for a thicker mix.

This recipe has too much stock. Next time I'd make it with 1 cup, not 2. Also, the original recipe has 1 1/4 cups of peas so I'd suggest increasing the quantity of peas slightly.
