Ingredients

Mustard & Apple Chicken Bake

  • 4 Chicken marylands or chicken pieces on the bone
  • 2 bacon rashes, diced
  • 1 brown onion, cut into wedges
  • 2 garlic cloves
  • 3 apples
  • 40 grams water
  • 10 grams olive oil
  • 1 tablespoon Dijon mustard
  • 500 grams chicken stock
  • 125 grams thickened cream, or coconut cream for dairy free alternative
  • 1 tablespoon Tarragon
  • 20 grams Butter

Recipe's preparation

  1. Add 1 apple and water to bowl and mix for 3 mins on speed 10 till its like juice. Set aside
  2. Put garlic cloves in bowl and chop for 3 secs on speed 8
  3. Add onion and bacon and oil. Cook for 3 mins at 100° on speed 1 reverse Counter-clockwise operation"Counter-clockwise operation"
  4. Add reserved apple juice and cook for 5 mins at 110° on speed 1 reverse Counter-clockwise operation"Counter-clockwise operation"
  5. Add stock, mustard, cream and tarragon. Cook for 7 mins at 110° on speed 1 reverse Counter-clockwise operation"Counter-clockwise operation"
  6. While the sauce is cooking, heat a fry pan and cook the chicken for approx. 3 mins on each side till golden. Pre-heat oven to 180°
  7. Place chicken in a baking dish. Once sauce is finished, pour over the chicken and bake in the oven for 35 mins or till the chicken is cooked through and sauce thickens slightly
  8. Meanwhile using the fry pan, melt the butter and add 2 apples (cut into wedges) and cook on a high heat turning occasionally for 3 mins or until caramelised
  9. Add the apples to the chicken mixture and cook for a further 5 mins or until just tender
