Portuguese Coconut Curried Chicken and Rice
- 1 onion, halved
- 2 clove garlic, peeled
- 1 tbsp olive oil, (or oil of choice)
- 500 grams chicken breast, sliced lengthways
- 400 grams tin chopped tomatoes
- 400 grams tin coconut cream
- 1-2 tablespoon vegetable stock concentrate
- 2-3 (to taste) tablespoon Portuguese curry Powder, (or curry powder of your choice)
- 300 gram basmati rice
- 450 grams water
- 2 carrots, julienned
- 1 zucchini, julienned
- handful cashews
- handful corriander

- Place Chicken strips onto Varoma tray season with salt and pepper
Weigh rice into simmering basket and rince well - Add onion and Garlic to mixer bowl and chop 5sec/speed 5 MC on, scrape down side of bowl
- Add oil and sautee 3mins/100degrees/speed1 MC off
- Add curry powder, cook 1min/100degrees/speed1 MC off
Add coconut cream, stock concentrate, water and tomatoes, put simmering basket with rice in place. Put varoma tray in place.
Cook 10mins/Varoma/speed4 **Stir rice periodically throughout cooking with spatula - Place vegetables into varoma dish (don't forget to place varoma dish with chicken back into place)
Cook 10mins/Varmoa/speed4
Check chicken, rice and vegetables are cooked - Remove Varoma dish and set aside
Remove simmering basket with aide of spatula and place into thermoserver (don't tip out sauce)
Place Vegetables and then Chicken onto rice and pour the remaining sauce on top - Top with a handful of cashews followed with corriander

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
