- 100 g black sesame oil
- 15 g fresh ginger, sliced
- 600 g dry sherry/port/Chinese cooking wine
- 600 g water

Place chicken into a bowl and pour over enough boiling water to just cover. Allow to sit for 10 seconds, then drain and rinse chicken under cold water. Set aside.
Place sesame oil into mixing bowl and heat 3 min/100°C/speed 1.
Place sesame oil into mixing bowl and heat 3 min/100°C/speed 1.
Add sliced ginger and sauté 5 min/Varoma/speed soft.
Add reserved chicken and sauté 5 min/Varoma/speed 1.
Add rice wine and water and cook 20 min/100°C/Reverse/speed soft. Leave dish to cool down gradually in the mixing bowl with the lid secured. This will allow the chicken to braise in the sauce and absorb all of the flavour in the sauce.
Sesame oil chicken
Tip
This is the most popular dish for new Taiwanese mothers during the first month after giving birth. The nutritional value found in the chicken, sesame oil and wine after cooking encourages a fast recovery of their ‘qi’ (pronounced chi) or energy levels. The traditional recipe cooked by the locals uses a whole chicken chopped into pieces, bones and skin included.
Use chicken drumstick meat, with the bones removed for the chicken fry meat.
Adjust the consistency to your preference by adding up to 250g extra water, to taste.
For a softer texture to your chicken, cook for a further five to 10 minutes in step 5.

Yes the measurements of ingredients are correct. This is a very traditional Taiwanese recipe. If you find the flavours too intense, may we suggest that it is served with a bed of rice.
