Ingredients
The Spicy Bake
- 50 grams Parmasen
- 50 grams Tasty Cheddar
- 2 cloves garlic
- 1 brown onion, Quartered
- 2 red chillies seeds in, Adjust to taste
- 6 sprigs parsley leaves only
- 1 red capsicum, Roughly Chopped
- 1 zucchini, Roughly chopped
- 20 grams olive or coconut oil
- 400 grams tomatoes, Roughly Chopped
- 150 grams water
- 1 tablespoon vegetable stock
- 3-400 grams chicken breast, cut into cubes
- 1-2 chorizo, Halved and thinly sliced
- 1 can Kidney Beans/4 bean mix, Rinsed and drained
- plain tortilla chips (corn chips), For Topping

Place Parmasen and Cheddar into mixing bowl and grate 10 sec/speed 9. Set aside. Clean and dry mixing bowl.
Place garlic, onion, chillies and parsley leaves into mixing bowl and chop 3 secs/speed 7. Scrape down sides of bowl.
Add capsicum and zucchini and chop 3 secs/speed 5. Scrape down sides of bowl.
Add oil and sauté 3 mins/Varoma/speed 1.
Add tomatoes, water, stock and chicken and cook 10 mins/100 C/"Counter-clockwise operation" /speed 1.
Add chorizo and beans and cook 10 mins/Varoma/"Counter-clockwise operation" /Speed 1. Place steaming basket on top of mixing bowl to avoid splashes.
Place cooked contents into an oven proof dish. Sprinkle with tortilla chips and reserved grated cheese.
Place in oven 180-200 C for 15-20 minutes. Serve hot
Tip
Serve with a fresh green salad
