Ingredients

Meatloaf

  • 4 eggs
  • 1 onion, halved
  • 1 clove garlic, peeled
  • 1 tablespoon olive oil
  • 500 grams Turkey, semi frozen, cubed
  • 1 carrot, large, cut in 6 peices
  • 1 Zucchini, large, quartered
  • 1 tablespoon Vegetable Stock Concentrate (EDC)
  • 2 tablespoons rice flour (EDC)
  • mixed vegetables, roughly chopped, eg. potato, carrots, beans, asparagus, brocolini

Red wine cranberry sauce

  • 50 grams brown or rapadura sugar
  • 1 tablespoon cornflour
  • 1 teaspoon Vegetable stock paste
  • 370 grams water
  • 180 grams red wine
  • 1 teaspoon balsamic vinegar
  • 170 grams dried cranberries
  • pinch ground nutmeg
  • pinch ground cinnamon

Recipe's preparation

    Meatloaf
  1. 1. Steam eggs until hard boiled as per EDC instructions and peel once cooled slightly.

    2. Place carrot and zuccinni in clean, dry TM bowl & grate 5-10sec/ speed 4.5. Peek inside TM lid for desired consistency. Set aside.

    3. Add garlic and onion, chop 3 sec/speed 6

    4. Add oil, sauté 3min/varoma/speed 1

    5. Add turkey breast and mince by pressing briefly 4-8 times/1sec/Closed lid"Closed lid" /turbo.

    6. Add reserved carrot/zucchini mixture, stock paste, rice flour and mix 20sec/Counter-clockwise operation"Counter-clockwise operation" /speed 5

    7. Remove mixture from bowl and shape into a large rectangle onto a piece of aluminium foil no wider than varoma dish. Place eggs in a line across middle and roll mince into a log to enclose.

    8. Place meatloaf wrapped in foil into centre of varoma dish and pack vegetables loosley around it, except greens. Set aside.

  2. Sauce
  3. 1. Add sugar and cornflour to clean, dry mixing bowl and mix 3sec/speed 2.

    2. Add stock paste, water and wine and mix 10sec/speed 2.

    3. Add vinegar, cranberries, nutmeg, cinnamon.

    4. Place varoma into position and cook 30-40min/varoma/Counter-clockwise operation"Counter-clockwise operation" /speed 1. Check to ensure meat is cooked through. Add greens into varoma dish in last 6-8min of cooking time.

Tip

This is a great alternative to a roast on Christmas day. The meatloaf mixture can be prepared the day before and then steamed with sauce and vegetables on eating day.

Ham slices can be added between mince & eggs in step 7 as an optional extra.

    Made this tonight with 500g of Turkey mince that I had in the freezer. I just skipped the mincing of turkey breast step and just added the mince I had with the vegetables, stock and rice powder.

    When I finished it made way too much for myself and partner to eat, so I split it in half and froze the uncooked half. Still made the same amount of cranberry sauce though, just as well because he has nearly finished it all, just leaving enough to go with leftovers.

    I served it with steamed potato and cob corn I had cooked in the varoma while the loaf was cooking and I added snow peas in the last 5 minutes. When the loaf had finished I decided to open the foil and brown it up a bit under the griller before serving.

    When is the sauce added? Do you cook it before adding to the turkey?

    I'm sure this will be a great recipe when I work out how big a "large" zucchini is supposed to be. Given that Zucchinis grow over a metre long, I don't think that's quite what was meant. A weight measurement would be great. I have been told previously that a normal zucchini size for recipes is 500g so I went with that but it still ended up too liquidy and too big.

    Still, it was easy, tasted good and it was a great meal for the kids. I will try again.
