Ingredients
- 200 grams Mayonnaise - made from Every Day Cookbook
- 1 teaspoon Mustard Powder or Dijon Mustard
- 1/2 lemon, juice only
- 1/2 teaspoon honey
- 800 grams chicken breasts, large
- 100 grams Bacon, pancetta or prosciutto etc
- 5 slices Bread (gf, wholemeal, your choice), cubed
- Spray Oil or Butter
- 5 eggs
- 2 baby cos lettuce, leaves only rougly chopped
- 100 grams Parmesan cheese, thinly sliced/shaved
- 4 Anchovie fillets, Optional

Preheat Oven to 200’C
Slice your chicken breasts into strips and place on tray of varoma on top of some wet, scrunched & re-flattened baking paper cut to size (make sure the steam can get through).
Mix a teaspoon(10g) of mustard, ½ ts honey and juice of half a lemon in a small bowl and pour over the top of your chicken.
Fill the TM bowl with 1000g of water and put the Varoma with chicken on top, cook 10m/Varoma/Speed 2
Place bacon onto a tray & place in the oven.
Butter the bread or spray with oil to help it crisp up. Place onto another tray and cook in oven for 8-10 min depending on your oven, you want it lightly browned & crispy. Bread & bacon should be ready at the same time.
Place eggs into the TM Basket and place in TM Bowl. Cook 10-15m/Varoma/Speed 2 (chicken remains in Varoma during this time for further cooking).
Put Cos Lettuce leaves into a serving bowl, add chicken, bread, sliced boiled eggs & bacon. Drizzle mayonnaise, (add optional anchovies), finish with parmeson.
Tip
Enjoy as a meal, as a salad with BBQ'd meats or as a filling in Wraps.
