Ingredients

Satay Sauce

  • 230 grams Peanut Butter from EDC
  • 50-100 grams water
  • 40 grams soy sauce
  • 40 grams brown sugar
  • 15 grams Sweet chilli sauce
  • 400 grams coconut cream

Satay Chicken

  • 2 fillets chicken breast or thighs, More if using thigh
  • 1 red capsicum sliced
  • some Sugar snap or snow peas, As much as desired
  • 1 carrot sliced
  • .5 red chilli

Recipe's preparation

    Sauce
  1. Add all ingredients to bowl and cook for 6 minutes, 100 degrees,  speed 2.

  2. Satay Chicken
  3. Once sauce is cooked, add prepared chicken and vegetables

    Cook on 100 degrees, Counter-clockwise operation"Counter-clockwise operation" , Speed 1 for 10 minutes or until chicken is cooked to your liking.

Tip

Serve on a bed of rice

    I cooked this for the first time tonight & used store bought crunchy peanut butter, light coconut cream, thigh fillets, omitted the Chilli and replaced the sugar snap peas with fresh green beans. I had intended to replace the Chilli with Chilli flakes, but forgot. The flavour was still delicious, however there was A LOT of liquid.
    Will cook this again, leaving out the water element of the sauce & adding in some Chilli flakes for some heat.

    Quick and delicious! Cooked my chicken for 15 mins, I also only used 30ml soy sauce and used coconut milk as I didn’t have any cream. Was perfect 👌🏻 Thank you for sharing! ☺️

    Easy. Quick. Yummy. 

    I was careful with my Soy sauce; soys can vary from one another quite a lot. I tried to use a good Soy sauce.

    I also cooked it for a bit more than 10 mins and chicken thighs were only just cooked through. 

    Definitely not a 'slimming' recipe though.

    Made this & it was awful.  I had to throw out.  Not sure what I did wrong, maybe the soy sauce was too much.

    So easy and quick!  I made with commercial peanut butter so I didn't add any sugar - delicious!
