Ingredients

Low carb cauliflower cheese bake

  • 1000 g cauliflower florets, (fresh or frozen)
  • 450 g broccoli, (fresh or frozen)
  • 200 g cream cheese
  • 225 g double cream
  • 400 g grated cheese, (I use medium cheddar)
  • 25 g butter, salted>ID15196
  • 100 g pancetta, (optional)
  • to taste salt
  • to taste pepper, black, ground

Recipe's preparation

    Sauce
  1. Preheat oven to 180 degrees
  2. Cook the broccoli until fork tender
  3. Discard cooking water and add to thermomix
  4. Add cream cheese, double cream, salt and pepper to the broccoli
  5. Blend speed 7 for 15 seconds
  6. Assemble
  7. Grease a baking dish with the buter and place the rest of the butter in pieces in the baking dish
  8. Cut cauliflower into florets and place in the baking dish
  9. Add pancetta pieces if using
  10. Pour sauce on top of the cauliflower
  11. Add grated cheese to the top
  12. Bake for 40 mins

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
