Ingredients
Simple Vegan Chickpea (Coconut) Curry
- 4 cloves garlic, Peeled
- 1 onion, Peeled and quartered
- 1 Capsicum, Roughly chopped
- 25 g olive oil
- 1.5-2 teaspoons cumin
- 1.5-2 teaspoons paprika
- 1.5-2 teaspoons turmeric
- 1 teaspoons curry powder
- 350 g potato, Peeled and diced
- 250 g carrot, Peeled and diced
- 1.5 teaspoons sugar
- 3 tablespoons soy sauce
- 350-380g can coconut cream
- 400g can Chickpeas, Rinsed and drained
- 200g can peas, Rinsed and drained

- Place garlic in bowl. Chop for 3 seconds on speed 7. Scrape sides.
- Add onion and capsicum. Chop for 3 seconds on speed 7. Scrape sides.
- Add oil. Saute on varoma for 5 mins, speed 1.
- Add dry spices, potato, carrot and sugar. Cook on varoma for 5 minutes "Counter-clockwise operation" "Gentle stir setting" with lid off.
- Scrape bottom. Add soy sauce and coconut cream. Cook on 100 degrees for 16 minutes "Counter-clockwise operation" "Gentle stir setting" with lid off. (Place simmer basket on top to prevent splatters).
- Add in chickpeas and peas, 2 minutes "Counter-clockwise operation" "Gentle stir setting" . Serve with rice.
Tip
Can add ginger and chilli to step 2 if desired
