Bolognese Sauce
- 1/2 pieces onion
- 1 pieces carrot
- 1 stalks celery stalk
- 1 sprigs fresh rosemary
- 250 grams Beef mince
- 250 grams pork mince
- 150 grams pancetta
- 125 grams chicken stock
- 75 grams Milk
- 75 grams white wine
- 1 tablespoons Butter
- 30 grams olive oil
- 150 grams tomato paste
- 1 to taste salt
- 1 to taste pepper, ground

I'm cooking this todayRecipe's preparation
- Roughly chop onion, carrot and celery. Place in "Closed lid" and chop 3 seconds "Counter-clockwise operation" speed 3
- Scrape down sides of "Closed lid" . Then place chopped 2cm pieces bacon.
- Add 30g olive oil and tbsp butter. Saute for 5 minutes veroma "No counter-clockwise operation" speed 1.
- Add beef and pork mince along with rosemary, salt and pepper to taste. Cook for 15 minutes veroma "Counter-clockwise operation" speed 1.
- Add wine replace measuring cup with basket to prevent splatter and cook 5 minutes 90°C "No counter-clockwise operation" speed 1
- add tomato paste and cook for further 15 minutes 98°C "No counter-clockwise operation" speed 1 then...
- ... add milk and chicken stock through lid.
- Once completed check sauce season as neccesary then cook further 25 minutes 98°C "No counter-clockwise operation" speed 1
Tip
This recipe is still in development particually around the liquid measurements. I have made this and as with most sauces these end up better when reheated the next day.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
