Risotto
- 40 grams Parmesan cheese
- 30 grams brown onion, halved
- 1 clove garlic
- 40 grams Butter
- 40 grams extra virgin olive oil
- 320 grams arborio rice
- 1 fillet chicken breast, cubed
- 1 slice bacon, chopped
- 60 grams dry white wine
- 2-3 tablespoons Vegetable stock paste
- 2 tablespoons ShiItake Mushroom, powdered (see note)
- 720 grams water

Place parmesan cheese into mixing bowl grate 10 sec/speed 10. Transfer into a bowl and set aside. Clean and dry mixing bowl.
Place onion and garlic into mixing bowl and chop 3 sec/speed 5. Scrap down sides of mixing bowl with spatula.
Add butter, olive oil and bacon and saute 3 mins/120c/speed 1.
Insert butterfly whisk. Add rice and saute 1 min/120c/"Counter-clockwise operation" /speed 1.5 without measuring cup.
Add wine and saute 2 mins/VAROMA/"Counter-clockwise operation" /speed 1.5 without measuring cup. Scrap bottom of mixing bowl well with spatula to loosen rice.
Add stock paste, mushroom powder, chicken breast and water. Scrap the bottom of the mixing bowl again to loosen rice. Cook 13mins/100c/"Counter-clockwise operation" /speed 1.5 placing simmering basket instead of measuring cup onto mixing bowl lid.
Transfer into ThermoServer. Using the spatula, combine with reserved parmesan cheese and serve immediately.
Tip
Shiitake Powder - Using dried shiitake mushrooms, mill for 10sec/speed 8. To omit, replace with 250g mushrooms of your choice.
Dried mushrooms are often packed with silica gel packets, make sure you remove before tipping the whole packet in.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. I added fresh ones and everyone ate it all up. Nothing left.

I only used 1 heaped tablespoon veg stock as added more bacon and used cup mushrooms and 2 chicken thighs instead. Extended cook time by 2 mins and stirred through baby spinach when in thermoserver.

Delicious! Full of flavour. I did both dried shitake mushrooms and fresh. I only included 15 grams of nutlex instead of the 40g butter and 40g oil as I don't like an oily risotto. it worked well. Thanks Kerry
I used Fresh mushroom and decreased the stock level after reading comments and added some spinach when in thermoserver. We enjoyed this meal. thank you
