Creamy bacon pasta carbonara
- 50-60 grams Parmesan cheese, Grated or cubed
- 3 --- shallots/spring onions, Cut into 3-4inch lengths
- 4 cloves garlic, Peeled
- 450 grams Bacon rashers or short cut, diced or strips
- 2 level tablespoons Chicken stock powder
- 850 grams Boiling water
- 300-450 grams cream
- 300-400 grams Dried Fettucine, Broken in half
- 2 eggs, Whisked together

- place cheese in thermomix and mill 5-10 seconds sp8. Remove and set aside.
- place shallots and garlic in bowl then 3 seconds sp5. Scrape down and repeat if required.
- Add bacon and cook for 10 minutes varoma ["Counter-clockwise operation" ]sp1.
- Add water and stock, then pasta. Cook for 10 minutes 100 degrees sp 1["Counter-clockwise operation" ]. (While cooking reboil the kettle and fill your thermoserver to preheat it.)
- Pour water out of thermoserver then add pasta to it.
Quickly whisk eggs and add to hot pasta with Parmesan. Mix around quickly which cooks your eggs without scrambling them. - Disclaimer: This is a mash up of 4 different recipes from thermomix and other sources, trying to find a one pot wonder with all the flavour of the original. the eggs are cooked gently by the residual heat of the pasta, there are no raw eggs in this dish. If pregnant and concerned about undercooked eggs, just leave them out but they do add protein and a texture that is unique to carbonara!
Tip
You can add mushrooms with the bacon, less or more cream, Parmesan,and eggs according to taste. You may need slightly more water depending on how much pasta you use. Play around with what suits your family best!

Yummo. Enjoyed by the whole family. I just added the cream with the water. Also had leftover cheese sauce which we added and made for extra creamy deliciousness. Only had half the bacon but it was still enough.
Brookie82:the water and stock get added with the pasta and cooked for 10 minutes before checking pasta and adding cream. After bacon is cooked with onion and garlic for 10 minutes. Sorry I'll try to edit recipe it's been a minute.
I agree with the last comment. The recipe is unclear about where to add the water and pasta initially.. I ended up cooking the pasta on the stovetop which kinda defeated the purpose, but it tasted great!
Sorry to ask a silly question... Does the water get added in with the bacon, garlic and onion? Then the cream gets added the water, garlic, onion, bacon mixture... and cook for further 3-5 mins all together? Thermo Newbie and just want to make sure I am reading it correctly. Sounds delicious!
More mushrooms and add later. Reverse 0.5 probably better. Used mixture of shells and spaghetti. Needed the extra cook time. Used 100ml tub of really thick cream with 150ml of milk. Perfect. Used 2 chicken stock cubes in 900 boiling water and could perhaps has used 1000ml as was very thick. Delicious

Used stock paste, and pretty much just halved everything and reduced cooking by 20%ish. Used spaghetti and pancetta instead of bacon, coz that's what I had.

I really loved this quick and easy and very creamy. The only thing is the stock is a lil to salty for me will do 1 tablespoon next time. I also just mixed the eggs in the thermomix for a minute on speed 1 just letting the heat cool down on its own.
