Creamy Chicken Soup
- 40g parmesan, cut into 3cm blocks
- 6-7 stalks fresh parsley, leaves only
- 2 level tbsp olive oil
- 2 celery stalks, cut into 2-3cm pieces
- 2 carrots, peeled and cut into 2-3 pieces
- 1 brown onion, cut into quarters
- 750ml liquid stock, chicken or veg, see tips
- 300-350g chicken breast or thigh, cut into 3cm pieces
- 160g cream cheese, room temp
- 250g Elbow or Macaroni pasta
- 120g Fresh Baby Spinach
- 1 tsp Dijon mustard

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
