Ingredients

Ravul inspired Gnocchi

  • 340 grams ricotta cheese
  • 40 grams Parmesan cheese, cut into pieces (3 cm)
  • 150 grams plain flour
  • 1 egg
  • 2 cloves garlic
  • 6 sprig parsley, stalks removed
  • salt, to taste

Sauce

  • 350 grams tomato, Can crushed/diced tomatos
  • 4 cloves garlic
  • 1 teaspoons tomato paste
  • 1 teaspoons sugar
  • 120 grams water
  • 20 grams olive oil
  • salt, to taste
  • pepper, ground, to taste

Recipe's preparation

    Making the Gnocchi & Sauce
  1. Place Parmesan cheese into mixing bowl Closed lid"Closed lid" and grate
    10 sec/speed 9
  2. Remove from the mixing bowl and place in a small bowl to add a little later.
  3. Add parsely and garlic and set 6 sec/speed 9.
  4. Add flour, egg, salt, chopped garlic and parsely and ricoota and knead or until just combined, prolong time if necessary.
    Dough function/30 sec
  5. Transfer dough onto a silicone bread mat or lightly floured work surface and gently work into a ball, then divide into 4 portions. Roll each portion into a thin sausage shape, then cut into pieces (approx. 1 cm in length) using spatula. If desired, gently score gnocchi by rolling pieces over the tines of a fork.
  6. Place a large saucepan with water over high heat and bring to the boil.
  7. Clean and dry mixing bowl.
  8. Add garlic to dry mixing bowl and set to 6sec/speed 10
  9. Scrape down mixing bowl and repeat 6sec/speed 10
  10. Measure and add oil, and set 5 minutes/ temp 120/ speed 1.5/ reverse blades Counter-clockwise operation"Counter-clockwise operation"
  11. Add tomatos, tomato paste, sugar, water, salt and pepper to taste and cook for 8mins/VAROMA temp/speed 1.5 reverse blades Counter-clockwise operation"Counter-clockwise operation" .
    Prolong time if necessary.
  12. Once water is boiling, carefully add gnocchi to saucepan. Gnocchi will rise to the surface when cooked (approx. 2 min). Remove cooked gnocchi with a slotted spoon and serve with cooked sauce.
