Ingredients

Recco Classico

  • 1 cloves fresh garlic
  • 1 tsp dried oregano
  • 2-3 Curry Leaves
  • 405 g tomato passata
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tbsp tomato paste
  • 1 tsp curry powder
  • 250 g pure cream
  • 1 tbsp olive oil
  • 500 g pasta, usually penne or fettuccine, but use what you prefer
  • 500 g prawns shelled and deveined, or chicken thighs if prefer
  • green chilli, to taste
  • coriander leaves, garnish

  1. Boil the pasta separately on the stove top.
  2. Add garlic clove to mixing bowlClosed lid"Closed lid" , chop 3secs/speed 7

  4. Add oregano, curry leaves and olive oil to mixing bowl Closed lid"Closed lid" cook for 3mins/120deg/speed1
  5. Scrape down sides of bowl Closed lid"Closed lid"
  6. Add tomato passata, sugar, salt, tomato paste to Closed lid"Closed lid" and cook for 5-7mins/120deg/speed 2
  7. Add prawns cook for 5mins/120deg/Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"
    or if you're adding chicken instead cook for 10mins/120deg/Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"
  8. Lastly add curry powder and cream and cook 5mins/90deg/Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"

    Add 2 extra minutes to cooking time if needed.
  9. Mix the cooked and drained pasta through the recco classico sauce in a serving dish.
  10. Garnish with fresh chilli and coriander. Enjoy!!

Tip

For a meat free version just omit the prawns or chicken.
